Chocolate Peanut Butter Bars

Chocolate Peanut Butter Bars
from my sister Natasha


1 3/4 cup oatmeal
3/4 teaspoon soda
1/2 teaspoon salt
1 1/4 cup flour
3/4 cup butter
1/2 cup sugar
1 1/2 cups brown sugar
2 eggs beaten
1 cup peanut butter
1 teaspoon vanilla

Mix dry ingredients.  Cream sugar and butter.  Add eggs, peanut butter and vanilla to sugar mixture.  Add dry ingredients and mix until well blended.  Bake in a greased jelly roll pan for 10-15 minutes at 350 degrees.  Let cool 5 minutes.  Frost with a thin layer of peanut butter.

On top of peanut butter layer:

Frosting:
1 cube butter
1/4 cup cocoa
1/3 cup milk
1 teaspoon vanilla
3 1/2 cups powdered sugar

Bring butter, cocoa and milk to a gentle boil.  Remove from heat and add vanilla and powdered sugar.  Frost immediately.  Wait about 15 minutes for the frosting to set up before serving.

Make sure you do not over mix these bars. When you over mix, you will get more of a cake-like texture rather than the soft gooey-like texture we are going for. Just mix until well blended.

If you are using a Bosch, use your cookie paddle attachments.

The dough after it had cooked.  Mine took 13 minutes, but the time will vary depending on your elevation.


Thin layer of creamy peanut butter spread on top of the crust.


The chocolate frosting for the top.


Tip:
I use a plastic knife to cut through anything gooey or warm.  It slides right through and doesn't scratch the bottom of your pan.  Works wonders for getting a perfectly cut brownie.



These are seriously too good to be true.  They freeze very well if you want to make them ahead of time for an event, or they also work just great stuffed inside your mouth.  You be the judge.  Now go and make them for your weekend treat...you'll be thanking me once you take your first bite.

These look so yum! The problem is if I make them then I may eat them...I see you solved that problem and took some to Jen...good idea :)

Just made these. I was not prepared for how fast the chocolate frosting was going to set when put on top of the brownie. I poured the whole thing over and by the time I got to the other side, it was stiff. I ended up having to make another batch of frosting and then covering the botched up stuff. Take my advice and frost a little at a time. :) We live and learn, right?
