Molten Chocolate Cake



Molten Chocolate Cakes

4 pieces (squares) Semi-Sweet Baking Chocolate
1/2 cup Butter
1 cup Powdered Sugar
2 whole Eggs
2 whole Egg Yolks
6 tablespoons Flour
2 cups Real Whipping Cream
2 tablespoons Sugar

Preheat oven to 425 degrees.

Spray 4 custard cups with Pam and place on cookie sheet.  Microwave chocolate and butter in large bowl on high for about 1 minute, until butter is melted.  Whisk until chocolate is also melted.  Stir in sugar until well blended.  Whisk in eggs and egg yolks.  Stir in flour.  Divide between cups.  Bake 13-14 minutes until sides are firm and center is soft.  Let stand 1 minute.  Combine sugar and cream and whip until stiff.  Invert cakes on dishes and top with whipped cream.

I have been on a mission for many many years to find that one perfect molten chocolate lava cake.  My search is over.  This is it, folks!  I died and went to heaven with my first bite.  I love this recipe because it's not rocket science.  Simple ingredients and easy directions.  Just what we want, right?  I thought this would be a great addition to your Valentine's Day menu.  Let me know what you think.  Also, it's another reason to go out and buy those ramekins or custard cups.

Melt chocolate and butter in a microwave safe bowl.  We can do that, right?  The butter will be melted all the way, but not the chocolate.  Whip out your whisk and whisk it all together until the chocolate is melted also.

Separate two egg yolks and add them with the two whole eggs.

All of the ingredients stirred together.  Be sure not to stir the living daylights out of this batter. You DO NOT want a cake-like substance.  We are wanting the middle to be soft.  Repeat, DO 
NOT over stir this batter.  Just stir until the ingredients are combined.  Mine had a few lumps here and there.  Not a big deal.

Be sure to spray your custard cups like crazy with cooking spray.  You want these little chocolate puppies to slide right out when ready.

Heaven on a plate I tell you.  I served mine with vanilla ice cream.  Oh baby!

Candace, is this the first thing you ever brought to me when we first came back from Alaska? It seemed like it was in a bundt cake pan, but maybe not.
